Honey Ginger Syrup

INGREDIENTS
1 1/2 cup honey
1 cup water
1 cup thinly sliced unpeeled fresh ginger
INSTRUCTIONS
Prepare syrup by adding honey, water and ginger to a small saucepan
Bring mixture to a boil
Reduce heat and let simmer on low for 10 minutes
Remove from heat and let sit for at least 15 minutes covered
Once syrup has cooled completely, transfer to a clean glass container and use in your favorite cocktails
