With Spring 2020 experiencing a COVID-19 takeover, we’re looking forward to the Summer season more and more each day. Before you know it, things will start heating up. But don’t sweat it, we’ve got you covered. Cool down with a Paloma, also known as the working man’s margarita.

The Paloma — the Spanish word for dove — is the National Drink of México. Rumored to have been invented in the mid-1950s shortly after the soft drink Squirt made its way to México, the Paloma took off and never looked back. Traditionally made with grapefruit soda, we decided to cut back on the extra sugar and sub in fresh grapefruit juice, simple syrup and sparkling water. No matter how you make it, you can never go wrong with this balanced and incredibly refreshing cocktail.

The base spirit for this drink is Olmeca Altos Tequila Plata — our favorite mixing tequila. With its slightly citric, yet sweet and fruity flavor, Altos pairs perfectly with the Paloma’s fresh lime and grapefruit juice. We balance the citrus out with a little simple syrup. An easy and guilt free carbonation is added with the sparkling water.

This drink is served in a wine or collins glass. A salted rim and grapefruit wheel or wedge are optional garnishes.

INGREDIENTS

  • 2 oz. Olmeca Altos Tequila Plata

  • 1/2 lime, freshly squeezed

  • 2 - 3 grapefruit wedges

  • 3/4 oz. simple syrup

  • Sparkling water or club soda

INSTRUCTIONS

  1. Add grapefruit wedges and simple syrup to a cocktail shaker and muddle well

  2. Add the remaining ingredients except the sparkling water

  3. Add ice and shake for 20 seconds or until shaker is frosty on the outside

  4. Double strain into a wine or collins glass filled with ice

  5. Top with sparkling water

  6. Serve
