July 10 is National Piña Colada Day! Celebrate with our version of this creamy summer treat that includes banana, pineapple and coconut with a cherry on top.

The Piña Colada is by far one of the most popular summer drinks ever created. Invented in Puerto Rico in 1954 by Ramón “Monchito” Marrero, the Piña Colada was originally served at the Caribe Hilton. In 1978, it went on to become the national drink of Puerto Rico. Whether blended or shaken, or served in a glass or a pineapple, it is still a must have drink to this day.

What makes our Serotonin & Sunshine unique is our house made banana infused rum. Serotonin, often called the happy chemical, is a naturally produced nerve chemical that has a huge impact on nearly every part of our body. It is known to regulate our mood, our digestive system, and even stimulates parts of the brain that control sleep and waking. Foods like bananas are rich in Tryptophan — the animo acid that can be converted into serotonin.

We took two ripe bananas, sliced them up and added them to two cups of white rum in a mason jar. We let this sit for at least two weeks in a dark, cool closet. Once the two weeks were up, we strained the rum though coffee filters and stored it in a clean, glass container.

While Piña Coladas are often blended, you can definitely make one with a cocktail shaker as well. Just make sure to give is a hard shake to ensure that the cream of coconut has been emulsified with the other ingredients.

This drink is served in a cored pineapple. A cherry or Hawaiian Flag garnish is optional

INGREDIENTS

  • 2 oz. banana infused rum

  • 1 oz. cream of coconut

  • 3 oz. pineapple juice

  • Crushed ice

INSTRUCTIONS

  1. Prepare banana infused rum (see above)

  2. Core your pineapple

  3. Place all of the ingredients in a cocktail shaker

  4. Add cubed ice (save your crushed ice for later) and shake for 20 seconds or until shaker is frosty on the outside

  5. Add crushed ice to your cored pineapple

  6. Strain Piña Cola into cored pineapple

  7. Serve
