Summer, summer, summerthyme (cues Will Smith’s Summertime). Move over mimosa, it’s time to chill out in this heat with your new favorite brunch cocktail.

Slightly bitter, slightly sweet, this citrus-forward cocktail is our new favorite obsession. The Campari’s bittersweet cherry and orange notes and balanced out by the orange juice and our homemade citrus-cello. Top it off with you favorite bottle of Prosecco because why not?

This drink is served in a coupe glass. A thyme sprig garnish is optional.

INGREDIENTS

  • 1/2 oz. Campari

  • 1/2 oz. Citrus-cello

  • 1 oz. orange juice

  • 1 thyme sprig

  • Fill with Prosecco

INSTRUCTIONS

  1. Place all of the ingredients except the Prosecco into a cocktail shaker with ice and shake for a few seconds

  2. Double strain into a coupe glass

  3. Fill with Prosecco

  4. Serve
