Apple Shrub

Shrubs are my new favorite obsession. And this one is just in time for the fall!

Both tart and sweet, shrubs are the perfect addition to any cocktail (mocktails too!). Made with equal parts fruit, sugar, and vinegar, you can make them right at home. Best of all, they last for about six months. That’s if you don’t use the entire back in one weekend like I do.

While there are two ways to make a shrub — the cold process and the heated process — I decided to go with the cold process. More on the intricate art of shrub making here. No matter how you make them, your shrub is guaranteed to turn out delicious.


INGREDIENTS

  • 2 granny smith apples, shredded

  • 1/2 cup honey

  • 1/2 cup brown sugar

  • 1 cup apple cider vinegar

INSTRUCTIONS

  1. Prepare shrub by shredding two granny smith apples with a hand grater

  2. Add shredded apples to a 32 oz. mason jar along with the honey, brown sugar, and apple cider vinegar

  3. Give the mixture a hard shake until everything is well mixed

  4. Let mixture rest in refrigerator for four days, shaking daily

  5. Strain through a fine mesh strainer a few times

  6. Store in a glass container for use
