Cool as a Cucumber

It turns out that cucumber and mint make a great pair. Raise a glass and chill out with our most refreshing cocktail yet.

A few weeks ago, we concocted a homemade cucumber vodka. We decided to finally put it to use. To make your own cucumber vodka, you only need a 24 oz. mason jar, 2 average size cucumbers and 2 cups of vodka — we recommend Skyy vodka. Start off by peeling the cucumber, slicing it lengthwise, and then removing its seeds. Then slice up the cucumber, add it to the mason jar, and pour the vodka on top. You should store the mason jar in a cool, dark place for up to two weeks. Gently shake daily. Once the two weeks are up, strain into a clean class container with a fine mesh strainer. The best way to get a very clear infusion is to strain the mixture through coffee filters. It takes forever, but it’s worth the wait.

Now for the recipe.

This drink is a slight spin on the beloved mojito — without the club soda. The fresh lime juice and mint, paired with the aloe vera syrup and cucumber vodka, create a perfectly balanced cocktail. After a long week, you can sit back, relax and cheers to the weekend.

This drink is served in a coupe glass. A mint leaf garnish is optional.

INGREDIENTS

  • 2 oz. cucumber infused vodka

  • 3 - 5 mint leaves

  • 3 - 4 lime wedges

  • 3/4 oz. aloe vera syrup

INSTRUCTIONS

  1. Prepare cucumber infused vodka (see above)

  2. Prepare the aloe vera syrup by adding one cup of aloe vera juice and one cup of sugar to a small saucepan

  3. Bring mixture to a boil

  4. Reduce heat and let simmer on low heat for 5 minutes

  5. Let syrup cool completely before use

  6. Place the ingredients in a cocktail shaker in the following order: mint leaves, limes wedges, aloe vera syrup

  7. Muddle

  8. Add cucumber infused vodka

  9. Add ice and shake for 20 seconds or until shaker is frosty on the outside

  10. Strain into a cocktail or coupe glass

  11. Serve
