Rose Gomme Syrup

Level up your cocktail game with this incredibly rich and silky smooth syrup.

Gomme syrup — also known as gum syrup or simply gomme — was an extremely popular sweetener in the mid-1800s. Unlike traditional simple syrups which call for equal parts (1:1) sugar and water, gomme syrup requires 2 parts sugar and 1 part water which is thought to be the highest ratio of sugar to water possible. To add an additional layer of viscosity, we use a gum arabic mixture which acts as an emulsifier and prevents the sugar from crystallizing and adds a smooth texture to both the syrup and any cocktails it is made with.

This gomme syrup is made even richer by using Demerara sugar — a type of large grain sugar cane with a hint of molasses which adds a light brown color and a caramel flavor. We swap out your average H20 with red culinary rose water to add a floral flavor to the syrup as well as for its boasted health benefits such as the ability to: soothe skin irritation, prevent and treat infections, enhance your mood, reduce wrinkles and other aging effects, as well as relief headaches among a host of other benefits.

INGREDIENTS

  • 2 part Demerara sugar

  • 1 part red culinary rose water

  • 1 ounce or 2 tablespoons gum arabic (food-grade, powdered)

  • 1/4 cup boiling hot water

INSTRUCTIONS

  1. Place gum arabic powder in a small glass jar or container

  2. Bring a small pot of hot water to a boil

  3. Stir in 1/4 cup of hot water with the gun arabic powder (there may still be some white clumps remaining)

  4. Let this mixture sit for a least 5 hours or up to 24 hours (You can stir mixture again when it becomes more gel-like to get rid of remaining clumps)

  5. Once your mixture has sat for at least 5 hours, combine Demerara sugar and rose water in a saucepan

  6. Bring to a boil and make sure that all of the sugar has dissolved

  7. Reduce heat and let simmer on low for 5 minutes

  8. Remove from heat and immediately stir in gum arabic mixture until you have a tick and smooth syrup

  9. Let cool completely

  10. Transfer to a clean glass container and use in your favorite cocktails
